Professional Pots with Pour Spouts

Why is it so hard to find professional stainless-steel sauce pots with pour spouts?

I'd like to upgrade my kitchen with industrial-quality pots and pans, but I'm having a very difficult time finding chef-quality stainless steel sauce pans with pour spouts. Why is that?

I know that professional kitchens will prefer square storage containers for liquids, because they're easier to pour-from.

Is there some chef's trick that I don't know? How do sauciers pour sauce from a sauce pot without making a mess, if the professional sauce pots lack a pour spout?

Practice, mostly.

If you try to slowly tip the pot until it pours, it makes a mess and runs down the side. If you swiftly (and confidently, because you've done this hundreds of times) tip the pot to pour, it pours cleanly.

You can practice the basics of this with two water glasses over a sink, or a pot full of water over a sink (or outside.) The mechanics change slightly with a thicker sauce or batter, but not that much.

Alternatively, if you only need a little sauce from the pot, a ladle does the job.

Also: square containers are preferred mostly because less space in storage, and particularly refrigerators, is wasted with square containers than round ones, rather than ease of pouring.
